The Ingredient Story
Chiwda โ the roasted, spiced flattened grain snack โ is a staple of Maharashtrian and Goan kitchens, eaten at tea time, packed for travel, given as prasad. Traditionally made with poha (flattened rice), this version uses millet flakes instead, which are higher in fiber, lower on the glycemic index, and more mineral-dense. Millets were the original snack grain of the Deccan plateau before rice took over. Roasted, not fried โ because the traditional method was always dry-roasting, and it turns out that was the right call all along.
